Appam Stew recipe — authentic Kerala Indian dish from Masala Spin

Ingredients

  • Coconut oil
  • Whole spices (cardamom, clove, cinnamon)
  • Ginger
  • Green chilies
  • Curry leaves
  • Mixed vegetables (carrot, potato, beans)
  • Water
  • Thin coconut milk
  • Thick coconut milk
  • Salt

Instructions

  1. 1Heat coconut oil and temper whole spices.
  2. 2Add ginger, green chilies, and curry leaves; sauté briefly.
  3. 3Add chopped mixed vegetables and potato; cook until tender.
  4. 4Pour in thin coconut milk and simmer for 5 minutes.
  5. 5Stir in thick coconut milk and salt; heat through gently.
  6. 6Do not boil after adding thick coconut milk.
  7. 7Serve hot with appam.
