Kerala Egg Roast recipe — authentic Kerala Indian dish from Masala Spin

Ingredients

  • Boiled eggs
  • Onion
  • Tomato
  • Ginger-garlic-green chili paste
  • Curry leaves
  • Coconut oil
  • Roasted spice mix (turmeric, chili, coriander, garam masala)
  • Salt

Instructions

  1. 1Heat coconut oil and sauté onion until golden brown.
  2. 2Add ginger-garlic-chili paste and curry leaves; cook until raw smell disappears.
  3. 3Stir in chopped tomatoes and cook until pulpy.
  4. 4Add roasted spice mix and a splash of water; cook masala well.
  5. 5Halve boiled eggs and gently add to the masala.
  6. 6Simmer for 5-7 minutes until eggs are coated.
  7. 7Serve hot.
