Veg Stir Fry recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 3 cups mixed vegetables (broccoli, bell peppers, snow peas, carrots), cut julienne
  • 1 medium onion, sliced
  • 4-5 garlic cloves, minced
  • 1-2 green chilies, slit
  • 8-10 curry leaves
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • 2 tbsp coconut oil
  • Salt and black pepper to taste

Instructions

  1. 1Heat coconut oil in a large pan or wok, add mustard seeds and let them splutter.
  2. 2Add curry leaves, minced garlic, green chilies, and sliced onion; sauté until onion is soft.
  3. 3Add all the mixed vegetables and turmeric powder; stir-fry on high heat for 7-10 minutes.
  4. 4Cook until vegetables are crisp-tender but still retain their bite.
  5. 5Season with salt and freshly ground black pepper.
  6. 6Serve hot as a side dish or light meal.
