Ros Omelette recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 3 eggs, beaten
  • 1 small onion, finely chopped
  • 1 green chili, chopped
  • 2 tbsp fresh coriander, chopped
  • 1 cup Goan chicken ros (gravy)
  • 1 tbsp coconut oil
  • Salt and pepper to taste

Instructions

  1. 1Whisk eggs with chopped onion, green chili, coriander, salt, and pepper.
  2. 2Heat coconut oil in a non-stick pan, pour egg mixture and cook a fluffy omelette.
  3. 3Carefully fold the omelette in half or quarter and remove from pan.
  4. 4Reheat the Goan chicken ros gravy in a saucepan until simmering.
  5. 5Place the omelette in a deep plate and generously ladle hot ros gravy over it.
  6. 6Serve immediately, optionally with a side of Goan pao.
