Banana Pancake recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 1 cup all-purpose flour
  • 1 ripe banana, mashed
  • 1 large egg
  • 1/2 cup milk
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp cardamom powder (optional)
  • 1 tbsp melted butter or coconut oil
  • Pinch of salt

Instructions

  1. 1In a large bowl, mash the ripe banana thoroughly.
  2. 2Add the egg, milk, melted butter/oil, sugar, and salt to the mashed banana; whisk until well combined.
  3. 3In a separate bowl, whisk together the flour, baking powder, and cardamom powder (if using).
  4. 4Gradually add the dry ingredients to the wet ingredients, mixing just until combined (do not overmix).
  5. 5Heat a lightly greased non-stick pan or griddle over medium heat.
  6. 6Pour about 1/4 cup of batter per pancake, cooking for 2-3 minutes per side until golden brown and cooked through.
  7. 7Serve hot with honey, jaggery syrup, or fresh fruit.
