Neer Dosa Recipe

Ingredients
- 1 cup raw rice
- Water for soaking rice
- Water for grinding batter
- Water for thinning batter
- 1/2 tsp salt
- 1 tbsp coconut oil (for greasing pan)
Instructions
- Soak raw rice in water for at least 4 hours or overnight.
- Drain the soaked rice and grind it into a very fine, smooth batter with water for grinding and salt.
- Add water for thinning batter to achieve a very thin, watery consistency (like buttermilk).
- Heat a non-stick tawa or griddle over medium-high heat and lightly grease with coconut oil.
- Pour a ladleful of batter onto the hot tawa, starting from the edges and swirling inwards to form a thin circle.
- Cover and cook for 30-45 seconds until the edges crisp up and the dosa turns translucent (do not flip).
- Gently fold the dosa into a half or quarter and remove from the tawa.
- Serve hot with coconut chutney, Goan fish curry, or Chicken Xacuti.
