Pao Omelette recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 2 eggs, beaten
  • 1/4 cup finely chopped onion
  • 1 green chili, finely chopped
  • 2 tbsp fresh coriander, chopped
  • 2 Goan pao (bread rolls)
  • 1 tbsp butter or oil
  • Salt and pepper to taste

Instructions

  1. 1In a bowl, whisk eggs with onion, green chili, coriander, salt, and pepper.
  2. 2Heat butter or oil in a pan over medium heat.
  3. 3Pour the egg mixture into the pan and cook until set, flipping once.
  4. 4While omelette cooks, slice the Goan pao horizontally, but not all the way through.
  5. 5Transfer the cooked omelette into the sliced pao.
  6. 6Serve hot, optionally with a dash of Goan chili sauce.
