Choris Pao recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 4 Goan choris (pork sausages)
  • 2 medium onions, thinly sliced
  • 1 green chili, slit (optional)
  • 4 Goan pao (bread rolls)
  • 1 tbsp vinegar (Goan coconut vinegar preferred)
  • 1 tbsp oil (from choris or extra oil)

Instructions

  1. 1Prick the choris and place in a pan with a little water; cook until the water evaporates and fat renders out.
  2. 2Remove choris, reserving the rendered fat. Slice choris into rounds or crumble if preferred.
  3. 3In the same pan with rendered fat (add a little extra oil if needed), sauté sliced onions until soft and lightly browned.
  4. 4Add green chili (if using) and cook for another minute.
  5. 5Return the choris to the pan, add vinegar, and mix well; cook for 5 minutes until heated through.
  6. 6Slice Goan pao horizontally without cutting all the way through.
  7. 7Stuff the choris mixture generously into the pao.
  8. 8Serve immediately, optionally toasted.
