Choris Pao Recipe

Ingredients
- 4 Goan choris (pork sausages)
- 2 medium onions, thinly sliced
- 1 green chili, slit (optional)
- 4 Goan pao (bread rolls)
- 1 tbsp vinegar (Goan coconut vinegar preferred)
- 1 tbsp oil (from choris or extra oil)
Instructions
- Prick the choris and place in a pan with a little water; cook until the water evaporates and fat renders out.
- Remove choris, reserving the rendered fat. Slice choris into rounds or crumble if preferred.
- In the same pan with rendered fat (add a little extra oil if needed), sauté sliced onions until soft and lightly browned.
- Add green chili (if using) and cook for another minute.
- Return the choris to the pan, add vinegar, and mix well; cook for 5 minutes until heated through.
- Slice Goan pao horizontally without cutting all the way through.
- Stuff the choris mixture generously into the pao.
- Serve immediately, optionally toasted.
