Veg Soup recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup mixed vegetables (carrots, beans, peas, corn)
  • 1/2 small onion, finely chopped
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 4 cups vegetable stock or water
  • Salt to taste
  • 1/2 tsp black pepper powder
  • 1 tbsp oil or butter
  • Fresh coriander for garnish
  • 1/2 tsp sugar (optional)

Instructions

  1. 1Heat oil or butter in a pot. Add chopped onion, ginger, and garlic, sauté until fragrant.
  2. 2Add all mixed vegetables and sauté for 3-4 minutes.
  3. 3Pour in vegetable stock or water. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  4. 4Season with salt, black pepper powder, and sugar (if using).
  5. 5Cook for another 2-3 minutes.
  6. 6Serve hot, garnished with fresh coriander.
