Misal Pav Recipe

Ingredients
- 1 cup sprouted moth beans (matki)
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 2 tbsp Kanda Lasun Masala
- 1 tsp goda masala
- 1 tsp ginger-garlic paste
- 2 tbsp oil
- 1 sprig curry leaves
- Salt to taste
- Farsan, chopped onion, lemon wedges, and pav for serving
Instructions
- Pressure cook sprouted moth beans for 1-2 whistles until tender.
- Heat oil in a pan, add curry leaves and chopped onion, sauté until golden.
- Add ginger-garlic paste and sauté for a minute, then add chopped tomato.
- Cook until tomatoes soften, then add Kanda Lasun Masala, goda masala, and salt.
- Add the cooked moth beans along with their broth. Add more water to achieve desired consistency.
- Simmer for 10-15 minutes for flavors to meld, creating the 'usal'.
- Serve hot usal in a bowl, topped with farsan, chopped onion, coriander, and lemon wedges, with pav on the side.
