Misal Pav recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup sprouted moth beans (matki)
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 2 tbsp Kanda Lasun Masala
  • 1 tsp goda masala
  • 1 tsp ginger-garlic paste
  • 2 tbsp oil
  • 1 sprig curry leaves
  • Salt to taste
  • Farsan, chopped onion, lemon wedges, and pav for serving

Instructions

  1. 1Pressure cook sprouted moth beans for 1-2 whistles until tender.
  2. 2Heat oil in a pan, add curry leaves and chopped onion, sauté until golden.
  3. 3Add ginger-garlic paste and sauté for a minute, then add chopped tomato.
  4. 4Cook until tomatoes soften, then add Kanda Lasun Masala, goda masala, and salt.
  5. 5Add the cooked moth beans along with their broth. Add more water to achieve desired consistency.
  6. 6Simmer for 10-15 minutes for flavors to meld, creating the 'usal'.
  7. 7Serve hot usal in a bowl, topped with farsan, chopped onion, coriander, and lemon wedges, with pav on the side.
