Sabudana Khichdi Recipe

Ingredients
- 1 cup sabudana (sago pearls)
- 1/2 cup roasted peanut powder
- 1 medium potato, peeled and diced
- 2 green chillies, finely chopped
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 2 tbsp ghee
- Rock salt (sendha namak) to taste
- 1 tsp sugar
- Lemon juice and fresh coriander for garnish
Instructions
- Rinse sabudana well, then soak in just enough water overnight or for 4-5 hours until soft.
- Drain any excess water completely from the soaked sabudana.
- Heat ghee in a pan, add cumin seeds, green chillies, and curry leaves.
- Add diced potato and cook until tender. Add sabudana, peanut powder, salt, and sugar.
- Mix gently but thoroughly, ensuring sabudana pearls are separate.
- Cover and cook on low heat for 5-7 minutes, stirring once or twice.
- Garnish with fresh coriander and a squeeze of lemon juice. Serve warm.
