Sabudana Khichdi recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup sabudana (sago pearls)
  • 1/2 cup roasted peanut powder
  • 1 medium potato, peeled and diced
  • 2 green chillies, finely chopped
  • 1 tsp cumin seeds
  • 1 sprig curry leaves
  • 2 tbsp ghee
  • Rock salt (sendha namak) to taste
  • 1 tsp sugar
  • Lemon juice and fresh coriander for garnish

Instructions

  1. 1Rinse sabudana well, then soak in just enough water overnight or for 4-5 hours until soft.
  2. 2Drain any excess water completely from the soaked sabudana.
  3. 3Heat ghee in a pan, add cumin seeds, green chillies, and curry leaves.
  4. 4Add diced potato and cook until tender. Add sabudana, peanut powder, salt, and sugar.
  5. 5Mix gently but thoroughly, ensuring sabudana pearls are separate.
  6. 6Cover and cook on low heat for 5-7 minutes, stirring once or twice.
  7. 7Garnish with fresh coriander and a squeeze of lemon juice. Serve warm.
