Ghavan recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup rice flour
  • 1/2 tsp salt
  • 2.5 cups water (or as needed)
  • Oil for cooking
  • Optional: 1/4 tsp cumin seeds

Instructions

  1. 1Combine rice flour and salt in a large bowl.
  2. 2Gradually add water while whisking continuously to form a thin, lump-free batter.
  3. 3The batter should be of pouring consistency, similar to crepe batter.
  4. 4Heat a non-stick griddle (tava) on medium heat and lightly grease with oil.
  5. 5Pour a ladleful of batter onto the hot griddle, starting from the outer edge and swirling inwards, to form a thin, lacy crepe.
  6. 6Drizzle a little oil around the edges and cook until the edges lift and the ghavan turns slightly golden.
  7. 7Carefully fold and remove from the griddle. Serve hot with coconut chutney or jaggery syrup.
