Sheera recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup coarse semolina (rava)
  • 1/2 cup ghee
  • 1 cup sugar
  • 2 cups milk
  • 1/2 tsp cardamom powder
  • A few strands of saffron (optional)
  • 2 tbsp chopped cashews or almonds

Instructions

  1. 1Heat ghee in a heavy-bottomed pan. Add semolina and roast on low heat until golden brown and aromatic.
  2. 2In a separate saucepan, heat milk until warm, then add saffron strands (if using).
  3. 3Gradually add the warm milk to the roasted semolina, stirring continuously to prevent lumps.
  4. 4Add sugar and cardamom powder. Continue stirring until the sugar dissolves and the mixture thickens.
  5. 5Cover and cook on very low heat for 5 minutes, allowing the semolina to fully absorb the liquid and swell.
  6. 6Stir in chopped nuts. Serve warm, garnished with more nuts if desired.
