Varan Phulka recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup Toor dal
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • Pinch of asafoetida (hing)
  • Fresh coriander for garnish
  • Water as needed for dal

Instructions

  1. 1Wash toor dal thoroughly. Pressure cook with turmeric and 3 cups water for 3-4 whistles.
  2. 2Mash the cooked dal to a smooth consistency, add salt, and bring to a gentle boil.
  3. 3Heat ghee in a small tempering pan, add cumin seeds and asafoetida.
  4. 4Once cumin seeds splutter, pour the tempering over the boiling dal.
  5. 5Simmer for 5 minutes. Garnish with fresh coriander.
  6. 6Serve hot varan with freshly made phulka (flatbread).
