Instructions

  2. 2For Sambar: Cook mixed vegetables with tamarind pulp, sambar powder, and cooked dal. Temper with mustard seeds and curry leaves.
  3. 3For Avial: Cook mixed vegetables with a ground paste of coconut, green chilies, and cumin. Finish with a swirl of yogurt.
  4. 4For Thoran: Finely chop vegetables (e.g., beans, carrots). Stir-fry with grated coconut, green chilies, and curry leaves.
  5. 5Ensure all three dishes are seasoned with salt to taste.
  6. 6Serve hot with steamed rice.
