Matki Usal Recipe

Ingredients
- 1 cup sprouted moth beans (matki)
- 1 large onion, finely chopped
- 1 medium tomato, finely chopped
- 1 tbsp Kanda Lasun Masala
- 1 tsp goda masala
- 1 tsp ginger-garlic paste
- 2 tbsp oil
- Salt to taste
- Fresh coriander for garnish
- 2 cups water
Instructions
- Pressure cook sprouted moth beans with a pinch of salt for 1-2 whistles.
- Heat oil in a pan, add chopped onion and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute, then add chopped tomato.
- Cook until tomatoes soften, then add Kanda Lasun Masala and goda masala.
- Add the cooked moth beans along with their broth. Add more water if needed.
- Bring to a boil, then cover and simmer for 10-15 minutes for flavors to meld.
- Garnish with fresh coriander. Serve hot with pav, chapati, or rice.
