Matki Usal recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 1 cup sprouted moth beans (matki)
  • 1 large onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 tbsp Kanda Lasun Masala
  • 1 tsp goda masala
  • 1 tsp ginger-garlic paste
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander for garnish
  • 2 cups water

Instructions

  1. 1Pressure cook sprouted moth beans with a pinch of salt for 1-2 whistles.
  2. 2Heat oil in a pan, add chopped onion and sauté until golden brown.
  3. 3Add ginger-garlic paste and sauté for a minute, then add chopped tomato.
  4. 4Cook until tomatoes soften, then add Kanda Lasun Masala and goda masala.
  5. 5Add the cooked moth beans along with their broth. Add more water if needed.
  6. 6Bring to a boil, then cover and simmer for 10-15 minutes for flavors to meld.
  7. 7Garnish with fresh coriander. Serve hot with pav, chapati, or rice.
