Kerala Veg Stew recipe — authentic Kerala Indian dish from Masala Spin

Ingredients

  • Mixed vegetables (carrot, potato, beans, peas)
  • Green chilies
  • Ginger (sliced)
  • Whole spices (cardamom, clove, cinnamon)
  • Coconut oil
  • Thin coconut milk
  • Thick coconut milk
  • Curry leaves
  • Salt

Instructions

  1. 1Heat coconut oil; temper whole spices and curry leaves.
  2. 2Add sliced ginger and green chilies; sauté briefly.
  3. 3Add chopped mixed vegetables; cook for a few minutes.
  4. 4Pour in thin coconut milk and simmer until vegetables are tender.
  5. 5Stir in thick coconut milk; heat through gently, do not boil.
  6. 6Season with salt and serve hot with appam or idiyappam.
