Ingredients

  • Paneer cubes
  • Coconut oil
  • Onion
  • Ginger-garlic paste
  • Tomato
  • Curry leaves
  • Thin coconut milk
  • Thick coconut milk
  • Kerala roasted curry powder
  • Salt

Instructions

  1. 1Lightly fry paneer cubes until golden; set aside.
  2. 2Heat coconut oil; sauté onion, ginger-garlic paste, and curry leaves.
  3. 3Add chopped tomato; cook until soft and pulpy.
  4. 4Stir in Kerala roasted curry powder; cook briefly.
  5. 5Pour in thin coconut milk; bring to a simmer.
  6. 6Add fried paneer; cook for 5 minutes.
  7. 7Stir in thick coconut milk and salt; heat gently without boiling. Serve hot.
