  • Boiled eggs
  • Onion
  • Tomatoes
  • Ginger-garlic paste
  • Green chilies
  • Curry leaves
  • Coconut oil
  • Thin coconut milk
  • Thick coconut milk
  • Kerala roasted spice powder

Instructions

  1. 1Heat coconut oil; sauté onion, ginger-garlic paste, green chilies, and curry leaves.
  2. 2Add chopped tomatoes and cook until soft and oil separates.
  3. 3Stir in Kerala roasted spice powder; cook briefly.
  4. 4Pour in thin coconut milk; bring to a simmer.
  5. 5Add boiled eggs; cook for 5 minutes.
  6. 6Stir in thick coconut milk and salt; heat through gently without boiling.
  7. 7Serve hot.
