  • Coconut oil
  • Onion
  • Ginger-garlic paste
  • Tomatoes
  • Curry leaves
  • Kerala curry powder
  • Thin coconut milk
  • Thick coconut milk
  • Salt

Instructions

  1. 1Heat coconut oil; sauté onion, ginger-garlic paste, and curry leaves until golden.
  2. 2Add chopped tomatoes and cook until soft and pulpy.
  3. 3Stir in Kerala curry powder and cook briefly until fragrant.
  4. 4Add chicken pieces and sauté until browned.
  5. 5Pour in thin coconut milk and simmer until chicken is tender.
  6. 6Stir in thick coconut milk; heat gently without boiling. Season with salt.
  7. 7Serve hot with rice or appam.
