Kanji recipe — authentic Kerala Indian dish from Masala Spin

Ingredients

  • Raw rice (Matta or Ponni)
  • Water
  • Salt
  • Ghee (optional)
  • Roasted papadam (for serving)

Instructions

  1. 1Wash rice thoroughly and drain.
  2. 2Combine rice and water (approx. 1:6 ratio) in a pot.
  3. 3Bring to a boil, then reduce heat to low.
  4. 4Simmer, stirring occasionally, until rice is very soft and broken down.
  5. 5Add salt to taste and stir well.
  6. 6Serve hot, optionally with a drizzle of ghee and roasted papadam.
