Goan Coconut Soup recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 2 cups thick coconut milk
  • 2 cups vegetable broth
  • 1 inch ginger, sliced
  • 3-4 garlic cloves, crushed
  • 1-2 green chilies, slit
  • 8-10 curry leaves
  • 1/2 tsp black pepper powder
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp coconut oil
  • Salt to taste

Instructions

  1. 1Heat coconut oil in a pot, add ginger, crushed garlic, green chilies, and curry leaves; sauté for 1 minute.
  2. 2Pour in the vegetable broth and bring to a gentle simmer.
  3. 3Add thick coconut milk, black pepper powder, and salt; stir well.
  4. 4Heat through for 5-7 minutes without boiling vigorously to prevent curdling.
  5. 5Garnish generously with fresh coriander before serving.
  6. 6Serve hot as a comforting starter or light meal.
