Goan Chicken Stew recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 500g chicken, boneless or bone-in
  • 1 large potato, diced
  • 1 large carrot, diced
  • 1 large onion, finely chopped
  • 1 cup thick coconut milk
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, slit
  • 4-5 black peppercorns, crushed
  • 1 tbsp coconut oil
  • Salt to taste

Instructions

  1. 1Heat coconut oil in a pot, add chopped onion and sauté until translucent.
  2. 2Add ginger-garlic paste, green chilies, and crushed peppercorns; cook for 1 minute until fragrant.
  3. 3Add chicken pieces and cook until lightly browned on all sides.
  4. 4Stir in diced potato and carrot, then pour in 1 cup of water and salt; bring to a boil.
  5. 5Reduce heat, cover, and simmer for 15-20 minutes until chicken and vegetables are tender.
  6. 6Add the thick coconut milk, cook for 5 minutes without boiling vigorously.
  7. 7Serve hot with Goan pao or steamed rice.
