Chicken Cafreal recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 500g chicken pieces (leg or thigh)
  • 1 cup fresh coriander leaves
  • 6-8 green chilies
  • 1-inch ginger, 6-7 garlic cloves
  • 1 tsp cumin seeds
  • 5-6 black peppercorns, 2 cloves, 1-inch cinnamon stick
  • 3-4 tbsp Goan coconut vinegar
  • 3 tbsp oil
  • Salt to taste

Instructions

  1. 1Grind coriander, green chilies, ginger, garlic, cumin, peppercorns, cloves, cinnamon, and Goan vinegar to a smooth, vibrant green paste.
  2. 2Marinate chicken pieces thoroughly with the cafreal paste and salt for at least 2 hours (preferably overnight).
  3. 3Heat oil in a heavy-bottomed pan or skillet over medium heat.
  4. 4Place marinated chicken pieces in the pan and cook, turning occasionally.
  5. 5Cover and simmer on low heat for 20-25 minutes until chicken is cooked through and gravy thickens.
  6. 6Serve hot with Goan pao or rice.
