Ingredients

  • Mixed vegetables (carrot, potato, peas)
  • Onion
  • Ginger-garlic paste
  • Tomatoes
  • Curry leaves
  • Coconut oil
  • Kerala curry powder
  • Thin coconut milk
  • Salt

Instructions

  1. 1Heat coconut oil; sauté onion, ginger-garlic paste, and curry leaves.
  2. 2Add chopped tomatoes; cook until soft and pulpy.
  3. 3Stir in Kerala curry powder; cook briefly until fragrant.
  4. 4Add mixed vegetables and a little water; cook until vegetables are tender.
  5. 5Pour in thin coconut milk and simmer for 5-7 minutes.
  6. 6Season with salt and serve hot with chapatis.
