Bhindi Bhaji recipe — authentic Maharashtra Indian dish from Masala Spin

Ingredients

  • 250g okra (bhindi), washed and dried
  • 1 large onion, thinly sliced
  • 2 green chillies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tbsp oil
  • Salt to taste
  • 1 tsp amchur (dry mango) powder
  • Fresh coriander for garnish

Instructions

  1. 1Trim ends of okra and slice into 1-inch pieces.
  2. 2Heat oil in a wide pan, add cumin seeds. Once they splutter, add sliced onion and green chillies.
  3. 3Sauté onion until light golden. Add the sliced okra and turmeric powder.
  4. 4Cook on medium heat, stirring occasionally, until okra is tender and no longer sticky.
  5. 5Add salt and amchur powder. Cook for another 5 minutes until slightly crispy.
  6. 6Garnish with fresh coriander. Serve hot with chapati or dal rice.
