Pumpkin Sabzi recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 300g pumpkin, peeled and diced
  • 1 medium onion, finely chopped
  • 2 green chilies, slit
  • 8-10 curry leaves
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • 1 tbsp jaggery, grated
  • 1/2 tbsp tamarind pulp
  • 2 tbsp coconut oil
  • Salt to taste

Instructions

  1. 1Heat coconut oil in a pan, add mustard seeds and let them splutter.
  2. 2Add curry leaves, green chilies, and chopped onion; sauté until onion is translucent.
  3. 3Add diced pumpkin and turmeric powder, mix well.
  4. 4Add 1/4 cup water, cover, and cook until pumpkin is tender (about 10-12 minutes).
  5. 5Stir in grated jaggery, tamarind pulp, and salt; mix gently.
  6. 6Cook for another 3-5 minutes until the sabzi is slightly dry and flavors meld.
  7. 7Serve hot as a side dish with rice or roti.
