Goan Veg Stew recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 2 cups mixed vegetables (potatoes, carrots, beans, peas, cauliflower), diced
  • 1 large onion, finely chopped
  • 1 cup thick coconut milk
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, slit
  • 1/2 tsp mustard seeds
  • 8-10 curry leaves
  • 4-5 black peppercorns, crushed
  • 1 tbsp coconut oil
  • Salt to taste

Instructions

  1. 1Heat coconut oil in a pot, add mustard seeds, curry leaves, and sauté until spluttering.
  2. 2Add chopped onion, ginger-garlic paste, green chilies, and crushed peppercorns; cook until onion is translucent.
  3. 3Add all mixed vegetables and 1/2 cup of water along with salt.
  4. 4Cover and simmer for 10-15 minutes until vegetables are tender.
  5. 5Stir in the thick coconut milk, cook gently for 5 minutes without bringing to a rolling boil.
  6. 6Serve hot with Goan pao or steamed rice.
