Chicken Xacuti recipe — authentic Goa Indian dish from Masala Spin

Ingredients

  • 500g chicken, cut into pieces
  • 1/2 cup grated fresh coconut, roasted
  • 10-12 dry red Goan chilies, roasted
  • 2 tbsp coriander seeds, roasted
  • 1 tsp cumin seeds, roasted
  • 5-6 peppercorns, 2 cloves, 1-inch cinnamon stick, 1 star anise, roasted
  • 1 medium onion, chopped
  • 2 tbsp ginger-garlic paste
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. 1Roast all whole spices and grated coconut until aromatic, then grind with red chilies, ginger-garlic paste, and a little water to a fine paste.
  2. 2Heat oil in a heavy-bottomed pan, sauté chopped onion until golden.
  3. 3Add the ground xacuti paste and cook for 8-10 minutes until oil separates and aroma develops.
  4. 4Add chicken pieces and salt, mix well, and cook for 5-7 minutes.
  5. 5Add 1 cup of water, cover, and simmer on low heat for 25-30 minutes until chicken is tender and gravy thickens.
  6. 6Serve hot with Goan pao or rice.
